Our local producers are waiting for you in the restaurant but also for breakfast

"La Cheffe, offers a warm and friendly cuisine with many homemade products. He likes to adapt his recipes according to the product.
The Soretel team prefers to work with local producers because they are men and women who are passionate about their products and with whom it is not uncommon to exchange hours!
Privately cook at low temperatures to obtain maximum flavour. The chef also loves to work with Chocolate and invites you to discover his tasty and gourmet recipes."

ROBIN, our head chef, has the following to offer you tonight:
Starters:
* Crispy duck confit
Served with salad and a herb cream from our kitchen garden.
* Cream of pumpkin soup
Served with spring onion tempura.
* Onion soup
Accompanied by a tartine gratinée with tomme cheese from our producer ‘La ferme de Tartifume’ (Pessac).
* Mushroom baked egg
And shavings of Bayonne ham from the Abotia estate.
* Starter of the week: Leek and chorizo quiche from the Abotia estate
Main course:
* Stuffed chicken ballotine
Chicken from La Ferme du Cabier, cooked at low temperature, stuffed with carrots. Served with a turmeric cauliflower cream and celery crisps.
* Potato galette
Served with a pumpkin velouté and braised pak choi.
* Grilled beef
French beef served with homemade chips, salad and a choice of sauce: mushroom or mustard and honey.
* Cosette with trout
Local ‘Sophie’ pasta served with spinach and trout from ‘Nouvelles Fermes’ (Mérignac).
* Dish of the week: Skate wing meunière, sautéed baby potatoes and broccoli
For dessert:
* Cheese platter
Assortment of cheeses from ‘Ferme de Tartifume’ (Pessac) and ‘La Fromagerie du Roy’ (Landiras).
* Tartlet with Ardèche chestnut cream
* White chocolate mousse
Served with a coconut tuile and red berries.
* Baked apple with Bordeaux butter
Served with hazelnut crumble and salted caramel.
* Dessert of the week: Carrot cake

Le Soretel is a restaurant open to all, in the evening only. We welcome guests from outside the hotel without distinction — don’t hesitate to join us.
Our restaurant can accommodate up to 55 people.



The Soretel restaurant in Mérignac-Bordeaux pays close attention to the challenges of sustainable development. As a result, our chef Robin creates his own menus, inspired by regional products and marketed in short circuits, which means that some of our produce is bought directly from local producers. This allows us to offer you gourmet dishes of impeccable quality!
The proximity of our producers allows our chef to work with fresh produce, and allows our menu to evolve with the seasons.
The cuisine at Le Soretel is distinguished by a touch of originality that enhances our chef Robin's locally inspired catering. We favor local or regional products, and opt for organic produce whenever possible. For those who don't wish to eat meat or fish, you'll always find a vegetarian dish on our menu!
We constantly strive to choose the best ingredients for our customers, and are committed to continuous improvement.

Located 3 kilometers from our establishment, Les Nouvelles Fermes are urban aquaponic farms! Thanks to this sustainable, responsible and water-efficient agriculture, we can offer you tasty trout rillettes with dill and lemon.
The tome de Magonty and fresh cheeses are matured at La Ferme de Tartifume, in Pessac, just less than 10 km from our restaurant.
The farm mainly consists of dairy cows that provide the milk for the cheeses produced directly on the farm.
